font-size: 19px;">采茶是一项非常有意思的活儿,大概很多人会这么以为吧?每每此时,总是有不少朋友跟我说想来体验一下采茶的快乐。对此我是深表欢迎的,但是我也总会给他们打好预防针。来可以,晒黑了不管,来了饭也不管(哈哈哈,多少有点难讲话)!当我跟我爸妈说的时候,总是被批评一顿。在他们心中我这样的行为不是待客之礼,朋友来了,饭吃饱、茶喝好是最基本的道理。只是,我心里明白,很多时候他们中午都是带点饼干就着山泉水应付一顿。当我有朋友来时,他们像会变戏法一样,怎么都会做出一顿丰盛的农家饭来(不得不夸一下,爸妈的手艺都是相当了得,而我只学得皮毛)。</span></p><p><img src="https://img.shanglushan.com/forum/202404/09/161726ypxs22dwsdxs04hb.png"/></p><p style="text-indent: 43px; font-size: 19px;">采茶也是一场马拉松式的耐力较量。天未亮时就要早早起床,夹带着前一天的疲惫,迎接新一天的到来。我在睡梦中依稀听到我妈在沟边洗衣服的棒槌的敲打声,我爸则悄悄把饭做好,我起床干饭就行。吃完饭,这出门就是一天。采摘总是站着的,一刁一刁地采着,回到家时食指总是隐隐作痛,多少是采摘时用力过猛了,从这方面看,我还是很努力的。但是,拿到家里过杆秤时,从量上来看,我都能稳稳垫底。</span></p><p style="text-indent: 43px; font-size: 19px;">采茶的天,总是那么不友好(至少我是这么觉得),既怕下雨也恐天晴。下雨时在家嗑嗑瓜子,追追剧的幸福生活,我爸妈大概从未想过。哪怕下雨,也是撑着伞在茶园中忙碌,从远处看去,俨然一幅山水画。天晴似乎更糟糕了,早上七点多,太阳爬过山头,照射大地,也照射在了爸妈的身上,泛出微微光芒。随着时间一分一秒地走,温风成了热气流,阳光也变得异常毒辣。没过多久,汗水已浸湿了他们的衣衫,实在了闷热的不行才脱下斗笠,在树荫里休息两分钟,渴了就接点山泉水,然后又开始忙碌了。</span><span style=";font-family: 仿宋_GB2312; font-size: 19px;">磨刀不误砍柴工,前期的准备工作总是能让事情变得更为简单。前一年的秋季,我爸总是会准备好来年的柴火。做茶需要大量的柴火,若等开春之时再准备恐是来不及。想必不少人都吃过柴火煮的饭,甚是香甜。用柴火大锅做出来的手工茶亦是如此,哪怕在屋外,也能闻到新茶的扑面香气。我也曾学着我爸的样子,抡起大斧,用力对准那已经被锯成段的硬柴,奈何体力有限,劈了三两下就累了。</span></p><p style="text-autospace: ideograph-numeric; line-height: 37px;"><span style="font-family: 仿宋_GB2312; font-size: 19px;">&nbsp;</span></p><p style="text-indent: 43px; text-autospace: ideograph-numeric; line-height: 37px;"><span style="font-family: 仿宋_GB2312; font-size: 19px;"><span style="font-family: 仿宋_GB2312;">庐山云雾茶(绿茶)的制作很是考验经验和技术,云雾茶的制作分为采摘、萎凋、炒青、揉捻、干燥五个步骤,若是红茶还得加上发酵这一步(我对于茶道的了解还不够专业,主要来源于多年的实践加之网上查询资料,不对之处欢迎指正)。可以说每一步都至关重要,采摘是确保茶品质的基础;萎凋能让叶子变软,易于成型;炒青能彻底破坏鲜叶的活性,以获得绿茶应有的色香味,</span><span style="font-family: 仿宋_GB2312;">“高温炒青、先高后低”的制作要求也考验着爸妈两人对于火候把控的默契度,好在这一点丝毫不用我替他们操心;揉捻可以理解为塑形,将叶片卷转成条,缩小体积,这就涉及到卖相了;最后一步烘干是茶香的关键,目前市场上所卖大多数采用机器制作、烘干,与传统的铁锅干燥相比,香味逊色不少,但是这种传统的手工制作、铁锅干燥极为耗时。这么多年,爸妈也始终坚持锅干这一理念,只为做出更好的成品茶。</span></span><span style=";font-family: 仿宋_GB2312; text-autospace: ideograph-numeric; line-height: 37px;"><span style="font-family: 仿宋_GB2312; font-size: 19px;"><span style="font-family: 仿宋_GB2312;">半夜三更睡是常态。采摘了一天,也没能有些许时间休息。没等屁股坐热,我爸便已经将火生好,我妈则提着一桶水倒入锅中,开始了</span><span style="font-family: 仿宋_GB2312;">“热锅”(前面提及炒青需要高温,若直接空锅起火的话,容易将锅烧穿,故在锅中倒入水来热锅)。四斤新鲜叶子才能做出一斤成品,通常两斤叶子炒一锅茶叶,从炒青到完工至少得两个小时以上。一晚上又能有多少个两小时呢?这也就注定了需要漫长的时间才能将当天的茶叶全部做好。说不上有多少次了,我妈在茶园采茶的时候站着站着眼睛就控制不住的合起来了,随地一躺就能睡着也是一点都不夸张。白天长时间采摘,晚上又熬夜制作,连续的劳作加之缺少睡眠,对身体和精神都是一种考验。</span></span></p><p><img src="https://img.shanglushan.com/forum/202404/09/162326hqarjyh76m3qhyjl.png"/></p><p style="text-indent: 43px;
